soji (semolina) My Style (Note: optional : I cook on stove and transfer to oven) In a pot on stove Melt +-500 g butter (optional : can use more butter)Add Cinnamon sticks, Elachi (cardomom) Pods, (optional little sultanas or raisins) and whole or sliced Almonds1 grated carrot (optional)Braise well Add 500g Taystee Wheat or SemolinaBraise well Add 2 cups milk and braise ( optional can use water)In a seperate bowl beat well :2 cups milk2 eggs +- 1 ½ cups sugar or condensed milkVanilla essence Rose essence+-½ lid egg yellow colouringSaffron Add all of above to soji (semolina) mixtureBraise +- 10 minutes Add 1 large can nestle cream Add 1 teaspoon crushed Elachi (cardomom) to mixtureKeep stirring to avoid scorching and cook well all together for few minutes on stove then Place pot in oven bake at 180*20-25 minutes (Tip :(For an Exotic Rich Diff FlavourUse sultanas prunes raisins almondsCashew nuts pistachios) However add the raisins and prunes last as it gives off a browny dull look to the yellow soji (semolina)) Tip: You can serve with more nestle cream on top garnish with a sprinkle of sliced almonds)Enjoy😉
