My version of Haji Ali Sandwhich Recipe ( Farzana Rangila)
Sumi Tweaked recipe abit.
Instead of using bread I made mini pitas. Any tried and tested recipe would be fine. I slit the pitas half way tru put the filling topped it with cheese and warmed it in the oven for a few minutes. This tasted absolutely devine.
Ingredients:
4 to 6 cloves of garlic
1 green chilli
½ teaspoon salt
½ teaspoon crushed red chillies
¼ teaspoon black pepper
Crush the above ingredients, place in a pot with 2tblsp oil, Add in ½ teaspoon turmeric power.
Heat all the above
To this add add 4 medium potatoes, chopped in to small squares, mix.
Braise on medium heat for 2 to 3 minutes.
Add in ¼ cup of water, cover pot, turn done heat to low.
Cook until super soft.
When this has cooled down add in 1tblsp of green chutney(dhanya chutney), and lightly mash the potatoes with a fork.
Dhanya chutney:
1 bunch of dhanya , leaves cut , washed and cleaned.
1 green chillie
Dash of lemon juice,
¼ teaspoon salt
Blend the above into a paste.
To assemble the sandwich:
Method:
1. Spread the dhanya chutney on 2 slices of bread 2. Spread potato mixture on 1 slice, 3. Place thinly sliced strips of green and red peppers on top of potatoe mixture.
4. Place grated cheese (mixture of mozzarella and cheddar) on top.
5. Close sandwich and grill with generous amounts of butter.
