INGREDIENTS
3potatoes(peeled and cubed)1 teaspoon salt1 teaspoon lemon juicePinch of arad (Turmeric)1/2 teaspoon crushed green chilliCurry leaves(finely chopped)Mustard seeds1/4cup oil
For the batter:1 cup Chana flour+- ¾ cup cold waterPinch of saltPinch of chilli powder1/2 teaspoon baking powder
Oil (Deep fry in hot oil)
Finger rolls or round rolls
METHOD
1.)boil potatoes in salt water,drain then add the salt,arad (Turmeric),green chilli and lemon juice and mash till smooth (keep Aside)
2.)make a vagaar by warming the oil,add the curry leaves and mustard seeds.
3.)when the mustard seeds start to pop remove from cooker and pour the vagaar over the mash, mix well and roll into small balls
4.)place in the fridge or freezer for a bit so that they keep their shape when frying.
5.)whisk all of the batter ingredients together but add a Little water at a time till a pancake like consistency is formed.
6.)dip balls in batter and fry till golden brown.
7.)serve in rolls with chutney of your choice
(I buy mint chutney,leave half as it is and mix the other half with a bit of yoghurt,salt and chilli so I have 2 chutneys to serve)
INFO & TIPS
The batter can be used as it is in this recipe as a batter for:
1.) green chillies
2.) slices of brinjal
3.) ready cooked kebabs
All of these variations have been tried and tasted :)
