METHOD
1.) Make a vagaar by warming the oil,add the curry leaves, salt, arad (Turmeric) and mustard seeds. Add it to the mashed potato, also add the green chilli and lemon juice and mix well.2.) Roll them into small balls, place in the fridge or freezer for a bit so that they keep their shape when frying.3.) Whisk all of the batter ingredients together but add a Little water at a time till a pancake like consistency is formed.4.) Dip balls in batter and fry till golden brown.5.) Serve in rolls with chutney of your choice and some fresh green and red jalepenos.
(I buy mint chutney, leave half as it is and mix the other half with a bit of yoghurt, salt and chilli so I have 2 chutneys to serve)
