DOUGH:4 cups flour 1 teaspoon salt +- 1 teaspoon somph / fennel seeds (optional)2 tablespoon milk powder (it makes dough soft)Mix together all the dry ingredients FOR LIQUID: ½ cup milk warm1 cup warm water1 Packet yeast1 tablespoon sugarNow add ½ cup oil to milk and water mixture Mixture should be Luke warmAdd gradually to dry ingredients to make a soft dough( You can add warm water if required)Allow dough to rise in warm placeFor +- 10-15 minutesRoll out dough and cut with doughnut cutter and leave it on greased tray to rise till double in size then brush with egg & sprinke poppy Seeds. Bake at 180" for 12-15 minutes till light gold Cool slit it in half so you have 2 rings..put in your filling of choice . it can be frozen fill the chicken top with cheese and seal properly in airtight container (Do, Not Add Lettuce if freezing)Thaw when required. Serve warmIf eating same day :Once bagels are cooled slit open put baby lettuce leaves some chicken filling and thin slice of cheese. Serve warm. Chicken filling:3 tablespoon ghee (Clarified butter) or oil1 teaspoon slightly crushed whole Jeeru (Cumin)4 Chicken fillet cut in small cubes 1 small onion grated water squeezed1Tblsp magic masala1 /2 teaspoon Dhana powderSalt to taste½ teaspoon Kashmiri Chilli powder ¼ teaspoon tumeric1 teaspoon paprikaIn pot heat ghee (Clarified butter) or oil add half grated onion sauteAdd crushed whole jeeraAdd chicken cubes braise slightly Add all spices add little small cubed green red capsicumsCook well..Add sauces eg: tomato sauce, Nando's bushveld braau & steers peri peri sauce and any or any sauces you prefer.. Add bit of chopped dhania (coriander) allow to cool Fill your bagels
