Chocolate Buttermilk Cupcakes

Ingredients:1 + 2/3 cups flour¼ cup cocoa powder¾ teaspoon baking soda¼ teaspoon salt125g butter, room temp 1 cup ordinary sugar 2 eggs 1 teaspoon vanilla essence ½ cup buttermilk ½ cup hot water
Method:1. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.2. Beat together butter and sugar on medium speed until light and fluffy.3. Scrape down the sides and bottom of the bowl as necessary, mix in.4. On medium speed, beat in eggs, one at a time, beating well after each addition. 5. Add vanilla and beat until combined.6. With the mixer on low speed, add half of the dry ingredients and beat just until combined. 7. Then beat in buttermilk, followed by the other half of the dry ingredients, beating slowly until combined. 8. Add hot water and beat just until combined. 9. Do not overmix—the less you mix, the lighter the cake will be. The batter should be liquid.10. Divide batter evenly between cups, filling them about ¾ full. 11. Bake in preheated 180degC for 15-20 minutes, or until a toothpick inserted into the center comes out clean. 12. Allow cupcakes to sit for few minutes, then remove from pan and allow to cool completely on a wire rack.
