3 limes (juiced & zest grated)
3 slices watermelon (juiced)
1⁄4 cup raw honey
Note: I serve with soaked subja seeds as well.
*Variation: make a ginger syrup with fresh ginger.
1⁄4 cup sugar
1⁄3 cup water
1⁄4 cup lime juice (3 limes)
1 inch ginger (cut in matchsticks)
Bring sugar, water and ginger to a boil in a pan over medium-high heat, stirring until sugar dissolves. Boil until reduced by half and syrupy, about 6 minutes. Remove from heat; stir in lime juice. Pour into a container with fruit and refrigerate until chilled.
