Ingredients: ½ spanspek (scooped/ diced) ½ sweet melon (scooped/ diced) ¼ watermelon (scooped/ diced) ½ pineapple (scooped/ diced)
Dressing: 3 limes (juiced & zest grated) 3 slices watermelon (juiced) ¼ cup raw honey Chopped mint
Method: Toss altogether.
Note: I serve with soaked subja seeds as well.
*Variation: make a ginger syrup with fresh ginger.
Ginger Syrup ¼ cup sugar ⅓ cup water ¼ cup lime juice (3 limes) 1 inch ginger (cut in matchsticks)
Method: Bring sugar, water and ginger to a boil in a pan over medium-high heat, stirring until sugar dissolves. Boil until reduced by half and syrupy, about 6 minutes. Remove from heat; stir in lime juice. Pour into a container with fruit and refrigerate until chilled.
