Thai Mango Zucchini Noodle Salad

Ingredients
50g rice noodles
1 avocado (cubed)
1 mango (chilled in fridge, cubed)
¼ pineapple (cubed)
100g carrot spaghetti
50g zucchini spaghetti
1 tablespoon lime juice
Dressing-
¼ pineapple (juiced)
1 tablespoon soy sauce
1 tablespoon lime juice
Garnish-
1 teaspoon black sesame seeds
Method:
1. Boil rice noodles for 5min. Then rinse in cold water. Leave aside.
2. Cube avocado and toss in lime juice.
3. Mix all salad Ingredients.
4. Mix dressing, pour over and toss.
5. Garnish with sesame seeds.
Serve with prawns/ chicken.
Note: I had a few baby gem lettuce leaves. Just added in.
