INGREDIENTS
Marinade:
1 whole chicken
2-3 teaspoon ginger garlic
1 tablespoon oil
1 tablespoon red chilli powder
2 tablespoons lemon juice
1 teaspoon salt
Peri Peri Sauce:
3 tablespoons olive oil
6-8 garlic cloves
sliced fresh red chillies( I used 5, but adjust according to heat preference!)
1 roughly chopped onion
few sprigs of flat leaf parsely
1 teaspoon paprika
2 tablespoons lemon juice
freshly ground black pepper and salt to taste
Later:
100g butter
½ cup cream
METHOD
1. Marinate chicken with spices above and cook till done.
2. In a separate pot, heat olive oil, and add 6-8 garlic cloves, and sliced fresh red chillies (I used 5, but adjust according to heat preference!)
3. After a few minutes, add one roughly chopped onion, and cook for 4-5 minutes.
4. Add a few sprigs of flat leaf parsley, paprika, lemon juice, freshly ground black pepper, and salt to taste.
5. Puree mixture into a paste, return to heat and add butter and cream. Simmer till slightly thickened.
6. Adjust flavouring (salt, pepper, coarse chilli flakes) to preference.
7. Add to cooked chicken, and grill in hot oven before serving.
INFO & TIPS
Serve with baby potatoes, grilled veggies of your choice
