Panacotta with caramel sauce and pecan praline

Ingredients:3 cups milk1 cup fresh cream1 teaspoon caramel essence½ cup sugar1 teaspoon agar agar (falooda powder) powderBoil together, strain, pour in moulds and leave to set.Unmould on a saucer top with praline and sauce.
PralineHandful pecan nuts¼ cup sugar Put pecans on baking mat, melt sugar in non stick pan till caramel colour and pour over pecans, when sugar gets hard, magimix till smooth.
Caramel sauce½ cup sugar Melt on low heat.Once melted add about ½ cup fresh cream and 2 tablespoon butter.Leave mixture to boil till smooth and thin consistency... if sauce is too thick, can be thinned with more cream or milk.
