Syrup- 1 cup apricot jam 1 cup water Few drops red food coloring
Garnish- Desiccated coconut
Method: 1. Preheat oven to 180degC. 2. Cream margarine and sugar together. 3. Add in eggs and beat well. 4. Stir in milk and vanilla. 5. Add in dry ingredients and beat for a smooth batter. 6. Spoon into greased/lined cupcake pans. 7. Bake for +/-15min until skewered and comes out clean. 8. Boil syrup ingredients till it thickens. 9. Leave to cool slightly. 10. Dip cakes into syrup and then into coconut.
