Red Cakes(Makes +/-2 dzn)@when_ruhana_cooks
Ingredients:125g baking margarine¾ cup castor sugar2 eggs¾ cup milk1 teaspoon vanilla essence2 cups cake flour2 teaspoon baking powder
Syrup-1 cup apricot jam1 cup waterFew drops red food coloring
Garnish-Desiccated coconut
Method:1. Preheat oven to 180degC.2. Cream margarine and sugar together.3. Add in eggs and beat well.4. Stir in milk and vanilla. 5. Add in dry ingredients and beat for a smooth batter.6. Spoon into greased/lined cupcake pans.7. Bake for +/-15min until skewered and comes out clean.8. Boil syrup ingredients till it thickens.9. Leave to cool slightly.10. Dip cakes into syrup and then into coconut.
