Ingredients: 500g hake fillets 2 tablespoon crushed garlic 1 teaspoon ginger paste 3 spring onions (finely chopped) 1 red chilli (chopped) handful fresh coriander (finely chopped) 1-2 tablespoon oil 1 tablespoon fish sauce ½ teaspoon salt zest + juice of 1 lime 1 teaspoon sugar 1 egg (lightly beaten)
Also needed: Oil for frying Breadcrumbs Sweet chilli sauce to serve
In a blender mix all ingredients. With greased hands form patties about 2-3 inches thick. Dip in dry breadcrumbs and leave in freezer to firm up. Fry in shallow oil on medium heat until golden on either side.
I served in slider buns with fries, salad, Trim, sweet chilli sauce and micro herbs.
