1 ½ cups castor sugar
1 cup milk
3 tablespoon oil
2 cups flour
2 teaspoon baking powder
1 teaspoon vanilla essence
Add milk and oil together and heat in the microwave for 2 minutues
Beat eggs and sugar till light and fluffy
Add vanilla essence to milk and alternate with the flour and baking powder into the egg mixture
Bake at 180 for around 30 minutues.
When cool spread smooth apricot jam over and sprinkle with coconut.
