Heat oil and add onion. Allow to lightly brown then add cumin seeds and mustard seeds. Cook till golden brown. Braisr arad (Turmeric),salt,dhania (coriander) jeeru (cumin) powder and ginger/garlic masala,taking care not to burn. Add grated tomato and cook till mix thickens for a few minutes. Add water and sugar to taste and mix well. Add the can of butter beans with the brine. Stir,add gharum masala,chopped dhania (coriander) and curry leaves if using, and cook till curry has thickened. Adjust seasonings and serve hot!
