INGREDIENTS
3 cups elbow macaroni2 large onions-finely chopped3 large cloves garlic-finely crushed3 tablespoon oil or butter1 ½ cups grated cheddar cheese½ cup grated mozzarella cheese3 large eggs1 ½ -2 cups milk1 x 410g pureed tomatoesSalt & freshly ground black pepper to taste
METHOD
Preheat oven 180*C. Cook macaroni & drain.Heat butter/oil & fry onions & garlic till golden. Add to macaroni. Stir in the cheeses. Pour into greased ovenproof dish. Beat pureed tomatoes, eggs, milk & seasoning together & pour over pasta. Garnish with slices of red pepper (optional). Bake 25-30 minutes
