curry mutton / leg mutton pieces
1 big onion chopped
1 big potato cut into meduim cubes
1 cinnamon stick
3 cloves , 3 Elachi (cardomom) , 5 peppercorn
1 teaspoon red chili paste
1 tablespoon ginger garlic paste
3 tablespoon vinegar
2 teaspoon dhana powder
1 teaspoon jeera powder
1⁄4 teaspoon haldi
flat 1⁄4 teaspoon garam masala ( optional ) I dnt always add
red chili powder to your taste
salt to taste
chopped dhania (coriander)
1 grated carrot
2 chopped fresh green chili
In a pot add oil/ ghee (Clarified butter) the whole spices and the onions and allow this to saute on meduim unti the onions almost golden , now addthe ginger , garlic and red chili paste and saute until you get the aroma . now add the cut and cleaned mutton pieces along with all the dry spices and mix well . allow to cook for abit then start adding water 3 cups or so and allow to cook on meduim to low until the mutton is almost tender add the potatos as well , remove potatoes if they soften other they wil break inside , now add the pureed tomatoes and allow this to cook ( water must burn out )
add a squeeze of lemon .
add some chopped dhania (coriander) and mix it in .
mix everything together
cut the inside ,, the middle part of the bun keep that piece aside .
fill with prepared mutton , garnish with dhania (coriander) .
serve with salsa
dish out the remaining mutton in an bowl , you can add more as you eating .

yo can use this recipe for chicken and decrease water content for cooking
