INGREDIENTS
1 cup flour
2 teaspoon baking powder
1 teaspoon salt
½ teaspoon paprika/Aromat (a South African Spice) (to yr taste)
¼ teaspoon jeeru (cumin)
fresh ground black pepper
Some chopped dhania (coriander)
½+ cup grated cheese
Handful of chopped red and or green peppers
1 ½ to 2 cups cooked veggies & or meat (like corn,
carrots, peas, aloo, chicken, steak, mince(shred
these) etc)
½ cup milk
4 eggs
METHOD
Pre-heat the oven to180 degree. Line a muffin pan
with 12 muffin cups (spray these as muffins tend to
stick to cases).
Whisk the dry ingredients together. Add the grated
cheese and toss to combine. Add the veggies and toss
to coat each piece with flour.
Whisk the milk and eggs together. Add to the dry
ingredients and gently stir until just combined
(it’s okay if there are a few lumps).
Divide evenly between the muffin cups and put it in
the oven for 15-20 minutes (depends on your oven) or
until a toothpick inserted comes out clean
