Spinach And Corn Crumpets

INGREDIENTS

-1 box McDougalls pancake mix flour
-2 teaspoon baking powder
-1 packet baby spinach leaves
-1 tin sweetcorn (drained)
-1 teaspoon + ¾ teaspoon salt
-1 teaspoon + ¼ teaspoon crushed green chilli
-1 teaspoon green masala
-2 teaspoon butter
-2 eggs(beaten)
-frylight

METHOD

1.)melt butter on medium heat,add the spinach,¾ teaspoon salt,¼ teaspoon green chilli,and green masala,cook till spinach is wilted then add the sweetcorn and leave to cool.2.)when cooled down,add the eggs,1 teaspoon salt and 1 teaspoon green chilli and mix well.3.)lastly add the pancake mix,2 teaspoon baking powder and a little bit of water to make a thick batter.4.)cook with spray and cook on a nonstick pan.
