INGREDIENTS
-ghee (Clarified butter)-2 teaspoon freshly ground garlic-1 green chilli, deseeded and finely chopped-¼ tin sweetcorn (drained)-¼ cup frozen petit pois peas-¼ cup grated carrots-½ tin sliced mushrooms(drained)-6 eggs, beaten-4 tablespoon finely chopped fresh flat-leaf parsley or coriander-1 packet bachelors macaroni(made according to packet instructions)-1 cup of cooked chicken (any)- shred-Salt and freshly ground black pepper to taste
METHOD
1.) Preheat the oven to 180°. Grease a medium-sized ovenproof flan or pie dish with ghee (Clarified butter).2.)Place all the ingredients in a large bowl and mix to combine. Season well and transfer to the dish.Place in the oven and bake for 25-40 minutes or until the eggs have set and the frittata is golden brown.3.)Remove from the oven and leave to stand for 15-20 minutes. Cut into slices.4.)serve with wild rocket leaves.
