-2 teaspoon freshly ground garlic
-1 green chilli, deseeded and finely chopped
-¼ tin sweetcorn (drained)
-¼ cup frozen petit pois peas
-¼ cup grated carrots
-½ tin sliced mushrooms(drained)
-6 eggs, beaten
-4 tablespoon finely chopped fresh flat-leaf parsley or coriander
-1 packet bachelors macaroni(made according to packet instructions)
-1 cup of cooked chicken (any)- shred
-Salt and freshly ground black pepper to taste
1.) Preheat the oven to 180°. Spray a medium-sized ovenproof flan or pie dish with frylight.
2.)Place all the ingredients in a large bowl and mix to combine. Season well and transfer to the dish.
Place in the oven and bake for 25-40 minutes or until the eggs have set and the frittata is golden brown.
3.)Remove from the oven and leave to stand for 15-20 minutes. Cut into wedges.
4.)serve with wild rocket leaves.
