INGREDIENTS

Pot 1 (the chicken):
-500g chicken fillet marinated an hour before cooking with a bit of salt,pepper,garlic and dhana jeeru (cumin)
(Strips or cubes)
Spices to add again when cooking the chicken:
-2tblspn butter
-half teaspoon red chillies
-1 teaspoon amina wonderspice peri peri masala
-half teaspoon black pepper
-¾ teaspoon salt
-2tblspns lemon juice
Pot 2 (the veggies) ;
-2tblpns oil
-1 tablespoon crushed garlic
-2tsps amina wonderspice peri peri masala
-1 cup mixed peppers
-2 cups sliced mushrooms
-1 onion sliced
-1 tin chopped tomatoes
-half cup chilli garlic sauce
-1/4cup sweet chilli sauce
-2 tblspns peri peri sauce
METHOD
Pot 1 (the chicken) :
Cook chicken in butter with all the above spices till water dries out,remove from pot and keep aside.
Pot 2 (the veggies) ;
Heat oil,add the onion,pepper,mushrooms and garlic and amina spice to oil, stir fry till water dries out,add the tomato,add the cooked chicken to this
Then add 1/2cup chilli garlic sauce
1/4cup sweet chilli sauce
2 tblspns peri peri sauce and cook for a bit. DON'T let sauce dry out!
Garnish with dhana and sliced green chillies
INFO & TIPS
**serve with vegetable stir fried rice OR boiled pasta/spaghetti and salad** OR garlic naan
