INGREDIENTS
Brinjal dhall (lentils) ( my fam call it wedding dhall (lentils) )
Boil two cups of pea dhall (lentils) wth ⅓ of a teaspoon of Bicarbonate of sodaSalt Cinnamon sticks Turmeric powder Garlic 1 heaped teaspoon of sugar
Once soft remove frm stove Blitz wth a blister if wanted I dnt blitz because the bicarbonate does wonders and cut cooking time as well I just use my whisk and whisk it a little
Take 8 small brinjals slice into slices and put into a boils of water wth a teaspoon of salt Set aside
Heat butter ghee (Clarified butter) and add 4 dry chillies 1 teaspoon Jeera seeds ½ teaspoon mustard seedsOnce fragrances is released Add your chopped onion Braise till golden brown Add two chopped tomatoes 2 sprigs of curry leaves Let cook a littleAdd the dhall (lentils) Remove the brinjals frm salt water and add to dhall (lentils) Cook 👨🍳 on low heat until done Add chopped fresh dhania (coriander) And sprinkle a little pickle masala on top
( I used the Indian dhall (lentils) spice to braise my dhall (lentils) ...( vadego something like that ) I have no idea what the English name is .. it’s the spicy mix tht You can buy at Indian spice shops )
