Pic&Recipe Credit: @Juwariyyah_Tar Coimbra Chicken 1 chicken disjointed Marinate in: 1 teaspoon salt 1 teaspoon lemon pepper/black pepper 1 teaspoon chilli powder 1 teaspoon chilli paste 1 teaspoon chilli flakes 1⁄2 t Tumeric 1⁄2 t dhana jeeru (cumin) Sprinkle of chicken spice 4 tablespoon mayonaise 1 sachet tomato paste 1 tablespoon garlic Squeeze half a lemon1⁄2 cup Coimbra sauce (if you want it extra saucy then you can add more, according to your preference) 2 tablespoon Olive oil Mix well Refrigerate for +/- 2 hours. Method: Add a little ghee (Clarified butter) to your pot Add your marinated chicken Cook on medium with the pot lid closed stir every 10 minutes while cooking. Chicken will take up to 30-40 minutes to cook. Make sure all the water is burned out. Serve with chips/roti/parata/rice/mixed veg/ corn/ mash.
