90g soft butter or margarine125 ml castor or normal sugarCream wellAdd1 eggVanilla essenceBeat well till fluffyAdd 1 ½ teaspoon baking powderGradually add +-1 ¼ cups flourTo make a very soft doughRoll out cut in rounds and place each tartlet in greased proof cup cake pansPlace ½ teaspoon mixed fruit or apricot jam in each tartlet and spread it properlyFor the coconut filling2 eggs Vanilla essence again3 tablespoon Castor or normalBeat well add 1 ½ cups coconut Add little milk(Let the mixture be a slight moist not runny)Place 1 teaspoon coconut filling on top of the jam Sprinkle with 100's and 1000's Chopped glaced cherries Place coconut on one side of the tart and jam on the other side Bake at 180* +- 15 minutesEnjoy
