Ingredients:3 Eggs 1 cup castor sugar 1 cup oil 3 teaspoon baking powder 1 ½ cups flour 2 teaspoon cinnamon Pinch of salt ½ teaspoon bicarbonate of soda2 cups grated carrots ¾ cup chopped pecan nuts ¼ cup water
Beat eggs and sugar till light and creamy Add oil and beat well. Soft dry ingredients and add to batter Add carrots and nuts Lastly add water Bake at 180 for about 30-40 minutes
Cream cheese icing
1 tub cream cheese- softened 115g butter 1 cup sifted icing sugar 3 teaspoon lemon juice 1 teaspoon vanilla essence Beat all of the above and refrigerate for 15 to 20 minutes. Spread over cake.
