INGREDIENTS
4 eggs½ cup castor sugar¼ cup flour¼ cup maziena¼ cocoa powder 1 teaspoon baking powder1 teaspoon vanilla essencePinch of salt
METHOD
Beat eggs until stiff and whiteAdd sugar and beat until it leaves a peakSift the dry ingredients 3 times and sift in one more time into the egg mixture and fold with a metal spoonLastly add vanilla essencePour into a greased and lined Swiss roll pan and bake at 200•C for 10-15 minutesTurn out immediately onto greaseproof paper sprinkled with caster sugarPeel of lining paper and trim edges with a sharp knifeRoll up cake with paper in between to make a Swiss rollCover with a cool damp cloth and cool slightlyUnroll and spread with filling and roll up again and allow to cool
For the fillingBeat 2 cups fresh cream with icing sugar until stiff and double in volumeWhen cake cooled unroll spread an even layer of cream drizzle blackforest Topping over the cream and roll cake again spread the remaining cream on the top of the cake roll sprinkle over chocolate shavings decorate with glazed cherries
