2 cups cake flour 1 cup full cream fresh milk1 ¼ cup castor sugar 3 extra large eggs 250g butter Pinch salt 3 teaspoon baking powder
In a mixing bowl, cream half butter and castor sugar until pale in colour. Whisk eggs separately add this to the butter and sugar mixture. On the stove top, heat milk and balance butter, cool set aside. Sift all dry ingredient twice. Next fold the dry ingredients into the wet mixture. Mix well. Pour into grease 23cm x 2 round or sandwich cake tin. Pre heat oven at 180 degree for 35-40 minutes until skewer comes out clean.
Custard frosting1 cup icing sugar 1 cup milk 125g butter 1 teaspoon vanilla essence 6 teaspoon custard powder
In a mixing bowl, cream icing sugar and butter until dessolved.
Take about 40ml of milk, add custard powder and vanilla essence, mix well into a paste. In a small saucepan, add the balance of the milk, heat and add the mixed custard powder paste and stir until it starts thickening. Remove from stove, add in icing sugar, stir cool and spread on the sandwich cakes as a filling. The balance spread on top and side of the cake and sprinkle with desiccated coconut. I used nut sprinklers around the edge.
Serve these as tea time treats, with a lovely cup of five roses tea 🌹🌹🌹🌹🌹.
