INGREDIENTS
With 3 EggsRemember Bicarb of soda has the power 4x of Baking Powder so ¼ teaspoon baking soda is equal to 4 teaspoon baking powder1 tablespoon butter½ cup milk3 eggs, separated¾ cup normal sugar1 ½ teaspoon cream of tartar1 pinch salt1 teaspoon vanilla essence ,(add extra if u like )1 cup sifted all-purpose flour1 teaspoon bicarb of soda
METHOD
Preheat the oven to 180* Line an 8-inch sponge cake pan with parchment paper Combine the butter and milk together in a saucepan over medium heat. Cook, stirring, until the butter melts. Remove from the heat and set aside. In a mixing bowl, add the egg whites and beat with an electric mixer until stiff peaks form. Add the yolks and continue to beat. Add the vanilla essence With the mixer running, slowly pour in the sugar and mix until well mixed ..FOLD in the cream of tartar, salt, and flour.THENAdd the BICARB OF SODA to the milkmixture and stir well then fold into the batter. Pour the batter into the prepared pan. Place in the oven and bake at 180 degrees for 20- 25 minutes or until the cake springs back when touched. Remove from the oven and let cool Before removing from the pan
INFO & TIPS
I added food colouring to batter and sprinkled flaked almonds on top before baking .
Can smear jam once baked and cooked and sprinkle dessicated coconut over
