Condensed Milk Potato Salad

Ingredients:1.5 kg baby potatoes½ cup mayonnaise ¼ cup condensed milk¼ teaspoon mustard powder (to taste)1 red onion (finely chopped)1 teaspoon salt1 teaspoon freshly cracked black pepperDiced ¼ red/green/yellow peppersOptional (diced boiled eggs)
Method:1. Boil the potatoes for 20 minutes until tender.2. Leave to cool, then peel & slice into quarters.3. Mix the mayonnaise, condensed milk, mustard powder, salt, pepper, rainbow peppers and onion.4. Pour over potatoes and mix well. 5. Garnish with sprinkling of black pepper.
