Zucchini Noodle Cashew Stir Fry Rec cred: Ruhana EbrahimPic cred: @mama_taught_me_well Ingredients:1 onion (sliced)2 tablespoon oil1 teaspoon crushed garlic2 large carrots (julienned)1 packet Checkers zucchini noodles2 large red bell peppers (largely chopped)½ cup frozen peas1 cup french cut green beans½ cup cashews, roughly chopped Sauce-2 tablespoon soy sauce1 tablespoon bbq sauce1 tablespoon Sriracha sauce1 teaspoon oil1 teaspoon vinegar1 tablespoon honey Method: 1. In a small mixing bowl, whisk together the ingredients for the sauce and set aside.2. Add oil in a wok over medium heat. 3. Once the oil is hot, add onion, garlic, green beans, peas and carrots. 4. Saute until fragrant and carrots have slightly softened, about 5 minutes.5. Add the zucchini & red pepper to wok.6. Using tongs, toss everything together. 7. Pour the sauce over and let sauce thicken for 3-5 minutes. 8. Gently toss everything together in the sauce.9. Add chopped cashews, reserving few, to the skillet and toss again.10. Garnish with reserved cashews.
