INGREDIENTS
250g egg noodles, boiled as per package250g oyster mushrooms, stems removed and large caps cut into equal sized pieces 1.5 cups steamed broccoli½ red pepper thinly sliced4 spring onions sliced into 1cm pieces (separate the white and green parts) 2cm piece of ginger finely chopped 2 teaspoon crushed garlic Red chili to taste ¼ to 1/3cup low sodium soy sauce3 tablespoon rice vinegar or balsamic vinegar2 tablespoon maple syrup or golden syrup¼ cup Flaming Thai Ginger and Soy sweet chilli sauce (optional) Toasted sesame seeds
METHOD
Heat olive oil in a pan and add red pepper slices and white parts of spring onion. Stir fry until soft and slightly browned. Add ginger and garlic and stir until browning, then add oyster mushrooms. Cook stirring only occasionally to allow mushrooms to brown in spots. Add steamed broccoli and red chilli and cook for a few minutes. Add in noodles, soy sauce, vinegar, syrup, ginger and soy sweet chilli sauce and mix well. Garnish with green parts of spring onion and toasted sesame seeds and serve.
INFO & TIPS
Strips of chicken fillet can be added to the stir fry to make the recipe non vegetarian.
