1 tin tuna(shredded in brine) or smoked salmonSushi rice (cooked)1 tablespoon Sriracha sauce1 tablespoon mayonnaiseSliced avocado Freshly ground black pepperOptional red chilli flakesCucumber (ribbons)Soy sauce (for dipping)
METHOD
1. Slice ribbons of cucumber with vegetable peeler. sprinkle little salt on ribbons and leave aside for water to release. Then dab cucumber dry with kitchen paper.2. Drain tuna well, squeezing all brine out.3. Line sushi mat with clingfilm, then lay cucumber ribbons down, overlapping.4. Then flatten on sushi rice in a rectangle onto cucumber.5. Next spoon on some tuna and sprinkle seasoning.6. Lay down sliced avo.7. Then drizzle on Sriracha and mayo.8. From one end, start rolling closed as you would sushi.9. Place down on plate & slice with a sharp knife.10. Served with soy sauce.
