Ingredients:1 tin tuna (shredded in brine)4 slices white bread1-2 tablespoon mayonnaiseFreshly ground black pepperGood pinch red chilli flakesCucumber
Balsamic reduction-½ cup balsamic vinegar2 tablespoon brown sugar1 teaspoon honey
Method for Reduction:1. Mix together balsamic vinegar, sugar and honey and reduce to half on medium heat.2. Store in airtight squeezy bottle in fridge.
Method for Tuna Roll:1. Slice ribbons of cucumber, sprinkle little salt on ribbons and leave aside.2. Drain tuna well, squeezing all brine out.3. Mix in mayo, pepper & chilli flakes.4. Cut crust off bread, & roll flat with a rolling pin.5. Spoon a line of tuna on one end of bread & roll like a swiss roll.6. Dab cucumber ribbons dry with kitchen paper, the wrap around bread roll. 7. Place down on plate & drizzle on balsamic reduction.8. I served with basil flowers & baby herb leaves as garnish.
