INGREDIENTS
1 cup fresh cream 1 cup sugar 2 eggs1 ½ cups cake flour 2 teaspoon baking powder1 teaspoon coconut essence
Beat cream and sugar together Add well beaten eggsFold in cake flour Fold in baking powder Add essence Mix lightly grease baking pans Place baking paper or was wrap in bottom of pans Scoop mixt into pan Bake 180•C. .....30 minutes
Filling for this cake ½ cup sugar 1 cup des coconut2 egg yolks A little milk Small piece of butter Boil on low heat untill egg is done and u hv a thick custard
METHOD
I do not eat custard so I Covered centre of cake with a can of caramel Ice the cake wth butter cream icing tht is flavored wth coconut essence
Flatten top
Pipe fresh cream rosettes ontop of cake I used one Woolworths double thick cream and I added a little icing sugar Beat it till it was thick Piped the rosettes ontop of cake
