Ingredients1 cup sugar 1 egg 11/2 tablespoons apricot jam1 cup cake flour1 teaspoon bicarb 1 teaspoon baking powder 1 teaspoon vinegar 1 cup milk 1 teaspoon vanilla essence
Syrup ingredients30 grams butter½ cup sugar 1 cup milk or fresh cream or a combination of ½ cup each½ cup water 1 teaspoon vanilla essence
METHOD
Method for pudding1.) preheat the oven to 180 degrees 2.) beat the sugar, egg and jam together 3.) add the remaining ingredients and mix into a smooth batter.4.) pour into a well greased Pyrex or oven proof dish and bake for 30 minutes until brown. Begin making the sauce (below) while the pudding bakes5.) once pudding is cooked remove from the oven prick all over with a fork and immediately pour the syrup over (it will seem as if it is to much but it willAbsorb into the pudding. 6.) serve hot with ice cream, whipped cream or vanilla custard
Method for syrup1.) while the pudding is baking place all of the sauce ingredients into a pan and boil until syrupy.
