INGREDIENTS
*Portuguese oven skewersRecipe and photo credit credit @the.glitter.grater*
1 kg chicken fillet cut into chunks wash, drain and set aside.
Marinade:1 teaspoon cayenne pepperJuice of 1 lemon 11/2 teaspoon BBQ spice½ teaspoon red chili powder 11/2 cup plain yogurt ¼ bottle Nando garlic sauce2-3 tablespoons Nando peri peri sauce ¼ cup green jalapeño sauce 2-3 tablespoons Maggie’s original sauce ¼ cup Inaparmans peri peri marinade 2 teaspoon Crushed garlic ½ teaspoon white pepper
METHOD
Method:1.) marinate pieces of meat in the marinade for at least ½ -2 hours. 2.) place on bamboo skewer sticks and place in a slightly deep oven tray, drizzle olive oil over and a few cubes of butter. Reserve the left over Marinade in a pot. Cover the oven tray with foil and bake for 30-45 minutes or until chicken is cooked but not dry on 180-190 degrees. 3.) when chicken is ready remove fromThe oven. Drain excess water/sauce from chicken into the pot with the reserved marinade. Add in a few tablespoons of garlic butter and boil for awhile untilThick. Serve on the side or pour over skewers. 4.) serve with salad, chips, Portuguese rolls and lemon wedges.* I don’t measure these are just estimated quantities , feel free to adjust the spices and sauces to your taste and preference ☺️
