1 kg Chicken Fillets or whole chicken2 teaspoon Salt1 teaspoon Ground Black Pepper½ teaspoon ground green chillie¼ cup Olive oil75g of butter ½ cup mayonnaise Juice from half a lemon 2 teaspoon lemon and black pepper spice2 teaspoon ground garlic½ bunch finely chopped coriander1 punnet baby carrots 4 medium Potatoes cut into wedgesSeasoned with1 teaspoon salt2 teaspoon potatoe spice 1 1/12 teaspoon lemon and black pepper spice1 teaspoon salt 1 teaspoon ground garlic2 teaspoon lemon juice 1 teaspoon lemon zest
METHOD
Toss the potatoes and baby carrots in the spice Marinade your chicken in all the spices Layer the chicken,potatoes and baby carrots into a oven proof dish,add chopped coriander to the olive oil and pour over the chicken and veggies and dot with butter.Cover with foil and bake in preheated 180degrees oven for,plus minus an hour depending on your ovenI steamed my potatoe wedges untill it was half way done.You can use any veggies you want for this dish. Eg.butternut pumpkin,gemsquash,sweetcornYou can layer this in an foil container and cover and leave in the fridge,overnight and bake it the next day.BTW my online order came minus the coriander so l did not use it this time.
