INGREDIENTS
Base-200g Tennis biscuits/marie/digestive100g melted butter
Filling-1 litre full cream milk1 tin condensed milk1 tablespoon vanilla essence2 cinnamon sticks8 tablespoon maizena (corn flour) (cornflour)3 XL eggs2 tablespoon butter
Topping-Cinnamon powder
METHOD
1. For the base, in a food processor, blitz the biscuits until they resemble coarse sand (alternatively crush them in a bag with a rolling pin).2. Melt the butter in the microwave until it becomes liquid.3. Add the melted butter to the biscuit crumbs and mix until well combined (or quickly pulse in food processor to combine).4. Tip the crumb mixture into a greased tart tin, pressing it down firmly across the bottom and up the sides. Place it in the fridge to firm up while you make the filling.5. In a thick based pot, pour in 3 cups of milk and condensed milk, adding in cinnamon sticks and vanilla essence.6. Place over medium heat and gently stir until the milk reaches boiling point. Be careful not to burn the milk.7. Remove the pot from the heat.8. In a bowl, whisk together the eggs, last cup milk and maizena (corn flour) till smooth.9. Pour the egg mixture into the warm milk in the saucepan, place it over very low heat and immediately start whisking.10. Whisk continuously for about 5min until it thickens and starts to leave "trails" in the mixture. (Note if it's not thick enough, the tart may not set properly).11. Remove the pot from the heat and whisk in the 2 tablespoon of butter.12. Pour the milk tart filling into the base until it reaches the top edge of the crust.13. Gently jiggle the tart from side to side to even out the filling.14. Allow it to cool slightly before placing it in the fridge for at least 4 hours or overnight to allow it to set.15.
