250g butter1 cup castor sugar2 eggs 2 tablespoon oil2 teaspoon vanilla essence2 ½ teaspoon baking powderFlour (enough for a soft dough)Beat butter and sugar till light and fluffy.Add eggs one at a time.Add oil,vanilla essence & baking powder.Add flour..Layer a small amount of dough into a pan and pat it to fit around.Add apricot jam and grate the rest of the dough on top.Bake at 180 till brown.cut while hot.
