RECIPE
Inspired by Shan's mixAdapted to my style
Marinate 1 kg cubed chicken fillets3 tablespoon Shan's butter chicken spice(this gives an orange colour )
(You can use a blend of white chilli powder or green chilli paste With a bit of black pepper crushedSome cinnamon powder a pinch of clove powder crushed Elachi (cardomom) (tumeric is optional)and aniseed )
1 teaspoon dhana jeera powder¼ cup yoghurt1 cup fresh cream1 liquidised boiled tomato¼ cup tomato puree(Mayo or lemon juice is optional as I add tomato puree which is sour)1 tablespoon tomato sauce (taste for tangy)Mix together keep aside few minutes
In pot add 150 g butter1sliced onion1 teaspoon whole Jeeru (Cumin)1 teaspoon saltCurry leaves optional1 or fresh whole Red or Green chilliAdd 1 full tablespoon ginger garlic Braise few minutes Add optional robot pepper stripsBraise now take only the marinated chicken cubes (without the marinate )Braise For 8 minutes till chicken changes colour a bitNow addThe rest of the marinade..cookWhen almost doneMake a paste of 1Tblsp mazina with water or milk Add to the above with ½ teaspoon Garam masalaAdd chopped green dhania (coriander)Enjoy with naan rotis
