Carrot Sojee (semolina flour)

Ingredients:1 cup milk + 1 large carrot1 egg2 drops yellow food colouringPinch saffron threads¼ cup sugarGood pinch cardamom powder¼ cup solid ghee (Clarified butter)1 large carrot (grated)1 cinnamon stick ½ cup semolina½ cup boiling water
Method:1. Liquidize 1 carrot with milk.2. Then mix carrot milk, egg, sugar, coloring, saffron and cardamom together. Leave aside till needed.3. Heat half the ghee (Clarified butter) on medium heat in a pot.4. Braise the grated carrot for 2min, then remove. Leave aside till needed.5. Heat the remainder ghee (Clarified butter) with cinnamon stick in same pot, then add in semolina and braise till golden.6. Now add in the milk mixture and mix in well till swollen.7. Place the braised carrots back in and mix in. 8. Drop stove heat to the lowest.9. Add in water and allow to steam till light and fluffy. 10. Decorate with slivered almonds. #mamataughtmewellrecipesNote: May add dessicated coconut to Sojee (semolina flour) if you like.
