Carrot Sojee (semolina flour)

Ingredients:1 large carrot (grated)½ cup semolina¼ cup solid ghee (Clarified butter)1 piece taj 1 cup milk1 large carrot1 egg2 drops yellow food coloringPinch saffron threads¼ cup sugarGood pinch elachie powder½ cup boiling water
Method:1. Liquidize 1 carrot with milk.2. Then mix carrot milk, egg, sugar, coloring, saffron and elachie together.3. Heat ½ the ghee (Clarified butter) on medium heat in a pot.4. Braise grated carrot for 2min, then remove.5. Heat remainder ghee (Clarified butter) with taj in same pot, then add semolina and braise till golden.6. Now add in milk mixture and mix in well till swollen.7. Add in braised carrots and mix in. 8. Drop heat to lowest.9. Add in water and allow to steam till light and fluffy. 10. Decorate with slivered almonds.
Note: May add dessicated coconut to Sojee (semolina flour) if you like.
