Peppermint Choc Cake

Ingredients:4 eggs1 cup castor sugar½ cup oil1 teaspoon peppermint essenceFew drops green coloring½ cup warm water1 ¼ cups cake flour2 ½ teaspoon baking powder
Ganache-1 small tin dessert cream2x 90g slabs dairymilk chocolate
Garnish-2 slabs Peppermint Crisp chocolate (grated)
Method:1. Preheat oven to 180degC.2. Grease & line a rectangle/ round pan.3. Beat eggs and sugar for 3min till pale & fluffy.4. Beat in oil & essence.5. Sift flour and baking powder.6. Add flour & water alternatively, then beat till smooth batter.7. Mix coloring in.8. Bake for approximately 30-40min or until a skewer inserted in center removes clean.9. Allow to cool. Remove from pan.10. If used rectangle pan, cut into squares. Pour over ganache & sprinkle on Peppermint Crisp.
