250g butter 1 cup sugar 2 cups oats 1 cup desicated coconut ½ cup chopped peacan nuts (optional) 1 heaped teaspoon cocoa powder 2 tablespoon boiling water 2 tablespoon golden syrup 2 teaspoon bicarb of soda Approx 2 cups flour
Mix together boiling water, golden syrup and bicarb, set aside. In a mixing bowl cream butter and sugar until white and fluffy. Add the oats, coconut, pecans and cocoa powder. Beat again. Then add the liquid mixture and mix well. Lastly add enough flour to make a soft dough. Start with one cup, then half until you reach a nice soft dough but not sticky. Roll out on floured surface.. Roughly scrap lines using a fork. Cut into rounds using a cookie cutter. Place onto a baking tray. Bake in a pre heated oven of 170 degrees for 10 - 15 minutes or until nice and golden. Remove from oven cool on a cooling rack. Melt chocolate and sandwich 2 biscuit. Or you can just drizzle the tops with melted chocolate.
