Ingredients:4 eggs1 cup castor sugar½ cup oil2 teaspoons vanilla essence½ cup warm water1 ¼ cups cake flour2 ½ teaspoon baking powder1 punnet blackberries
Method:1. Preheat oven to 180degC.Place cupcake or muffin liners in pan.2. Wash & chop blackberries in halves.3. Beat eggs and sugar for 3min till pale & fluffy.4. Beat in oil & essence.5. Sift flour and baking powder.6. Add flour & water alternatively, then beat till smooth batter.7. Fold in blackberries, placing few on top of batter.8. Bake for approximately 10-15min for cupcakes, or 15-20min for muffins or until a skewer inserted in center removes clean.9. Allow to cool.10. Dust with icing sugar.
