1 large onion (chopped)EggsLittle oil (for cooking)Little butter (for cooking )½ teaspoon jeera seeds2 whole green chillies (slit)1 level teaspoon red chilli and ginger garlic paste ½ teaspoon tumeric powder ½ teaspoon dhana Jeeru (Cumin) Salt to taste1 teaspoon red chilli powder Crushed chillies (to sprinkle)Pepper (to sprinkle)3 meduim tomatoes (grated)2 tablespoons tomato puree Coriander (for garnish)
Add onions in a non stick pot with butter and oil. Saute onions till soft, add in red chilli and ginger garlic paste, green chillies, masalas and braise for about a minute. Now add in grated tomato and tomato puree, cook till chutney thickens and oil comes up. Break in eggs one at a time, cook on meduim heat with the pot closed till eggs are done. Sprinkle crushed chillies, pepper and salt on eggs and garnish with dhania (coriander).
