RECIPE
1️⃣ Marinate meat for a minimum of 2 hours (if possible)
1kg mutton - (cut in chunks) ¬1 cup yoghurtHandful of fried onions1 tablespoon ginger garlic masala1 teaspoon garam masalaSalt to taste
2️⃣ In a pot, add:
3 tablespoons oil/ghee (Clarified butter)1 medium-sized onion finely chopped2 cardamom pods (Elachi (cardomom))1 cinnamon stick2 peppercorns2 cloves1-2 bay leaves1 teaspoon cumin seeds
Allow it to braise until the onions are golden-brown.
3️⃣ Then add:
1 teaspoon ginger garlic masala1 teaspoon coriander powder
4️⃣ Next, add:
Marinated mutton piecesWater
Let it cook for approximately 1 hour (until meat is tender).
⚜️ Potatoes can be added when the mutton is approx. halfway done.
5️⃣ Once the meat is cooked, add:
1 teaspoon red chilli powder (adjust to taste) ½ teaspoon turmeric powder1 teaspoon dhana jeeru (cumin) (cumin & coriander powder) 1 teaspoon cumin seeds 1 teaspoon garam masala2 medium-sized tomatoes grated/liquidized1 sachet tomato pasteSalt to taste
Add 250ml of water (1 cup) and let it come to a boil, on low heat.
6️⃣ Lastly, add a handful of freshly chopped coriander. Serve hot with traditional white rice.
