
Toasted Marshmallow Topped Chocolate Mayonnaise Cupcakes

285ml cake flour (150g)142.5ml sugar (125g)37.5ml cocoa (16g)5ml baking powder2.5ml bicarbonate of soda125ml mayonnaise125ml water2.5ml vanilla essence80g. Chocolate, chopped (or use choc chips)
METHOD
Sift the cake flour, cocoa, baking powder and bicarbonate of soda together. Add sugar and mix. Add the mayonnaise and water to dry mixture and mix well. Add vanilla to mixture and beat well. Fill cases with 1 tablespoon. batter and bake for approximately 12-15 minutes at 180deg Celsius. (Fill cases with 1 tablespoon batter. Makes 12)
