250g butter 1⁄2 cup castor sugar 2 egg yolks 1 teaspoon vanilla essence 1⁄2 teaspoon salt +/- 2 and 1⁄2 cups flour 2 egg whites Coconut for rolling Jam for filling centres
Cream butter and blend in sugar till creamy. Add egg yolks and vanilla and mix. Add flour and salt and combine to make a pliable dough. Break of pieces of dough and roll into tiny balls. Dip in slightly beaten egg whites, roll in coconut,place on greased baking tray and indent centre with your little finger,making sure it almost goes to the bottom. Bake @ 180*C oven for about 20 minutes or until golden. Allow to cool and fill centres with jam. Can fill with cherries, and instead of coconut roll in nibbed or slivered almonds.
