½ cup castor sugar
2 egg yolks
1 teaspoon vanilla essence
½ teaspoon salt
+/- 2 and ½ cups flour
2 egg whites

Cream butter and blend in sugar till creamy.
Add egg yolks and vanilla and mix.
Add flour and salt and combine to make a pliable

Dip in slightly beaten egg whites, roll in coconut,place
on greased baking tray and indent centre with your
little finger,making sure it almost goes to the bottom.
Bake @ 180*C oven for about 20 minutes or until
