500g chicken breast fillet washed & cubed½ red pepper chopped½ green pepper chopped½ yellow pepper chopped1 onion finely chopped3 tablespoons green olives chopped3 tablespoons black olives chopped4 tablespoons canned sweetcorn 2 cups cooked mushrooms(optional)5 tablespoons pizza topping sauce½ teaspoon salt½ teaspoon milled black pepper 1 teaspoon mixed herbs1 teaspoon fine chillie powder 1 teaspoon crushed chillie powder1 teaspoon chillie ginger garlic2 tablespoons cooking oil250 grams grated mozzarella or white cheddar cheese or any other melting cheese of choice
Flour paste:4 tablespoons flour¼ cup water
Crumb coat:2 eggs beaten250g breadcrumbs
1. Heat oil in frying pan. 2. Add chicken, pepper & ginger garlic and cook until water evaporates.3. Add the rest of the ingredients besides the cheese, combine well and allow to cool completely.4. Add cheese just before filling & mix through.5. Warm bread slices in the microwave for 30 seconds, each time. 6. Roll each slice flat with a rolling pin and cut out the crusts. Warm bread is easier to roll.7. Brush flour paste on all four sides. Place teaspoons full of filling towards the starting edge, gently roll over the filling holding it tightly into position and then press the open ends together to close. 8. Coat with egg and breadcrumbs.9. Fry in hot oil.10. The rest can be frozen for up to 3 months. 11. The filling will make up to 40 pizza bread rolls at once.
INFO & TIPS
This filling can be used on mini pizzas or to make pastry pies and quiches. If you’re a mayonnaise fan, by all means, load it!
For a spicier filling use one of your favourite chilli sauces mixed with tomoto sauce.
