6 large potatoes sweet potatos if your feeling healthy 500g dices chicken fillet (optional)1 punnet sliced mushrooms 3 cloves garlic (finely choped)2 green chillies (finely chopped)1 onion (finely chopped)2 grated carrots ½ punnet baby marrow sliced½ red pepper chopped½ green pepper chopped½ yellow pepper chopped250ml sour cream (more if you like)1 small tin cream style sweetcorn 1 teaspoon salt1 teaspoon lemon pepper1 teaspoon zeal½ teaspoon white pepper 1 teaspoon fresh ground black pepperGrated cheese(optional)1Tbls Chives
1 tablespoon Chives to garnish
Bake potatoes for 60 - 90 minutes depending of the size...
In a large frying pan ,fry onions garlic and green chillies on low in 1 tablespoon ghee (Clarified butter)( add chicken after onions are soft if your using chicken)
Once onions are soft add mushrooms, peppers ,carrots and marrows...
Fry for a bit then add all the spices..
When cooked add sweetcorn ,mix and take off the heat allow to cool for about 15 minutes then add sour cream and chives
Slice open potatos and spoon in creamy mixture (top with cheese and grill optional)
Top with chopped chives
