1. Saute onion until golden, add garlic and spices, braise till fragrant. Add tomatoes, oregano, basil and sugar and cook till reduced. 2. Melt butter in a non stick pan. Season chicken with salt and pepper. Fry on either side 3 minutes and leave aside. 3. Make a dry rub with spices. Rub onto eggplant slices. Place on oven tray and drizzle oil. Cook in oven on 180 degC till tender. Leave oven on. 4. Place down half of eggplant slices. Then place on chicken. Place down remainder of eggplant. 5. Spoon on marinara sauce, then cheeses. 6. Melt butter for topping and mix in panko crumbs. 7. Spoon onto cheese and place in oven. 8. Bake for 20min until top is golden and crunchy.
