500 grm mutton/beef/chicken 2-3 cup rice (wash& boiled) 2 boiled potatoes ¾ cup brown onion 1 onion sliced 1” cinnamon 2-3 cloves ½ teaspoon whole black pepper 2 star anise 2 brown Elaichi 2-3 green Elaichi 2 bay leaves 2 tablespoon red chili powder 1 teaspoon haldi 2-3 tablespoon dhana powder 3-4 green chilies 1 teaspoon Garam masala 1 teaspoon jeera powder 1 tablespoon ginger 1 tablespoon garlic ½ cup Greek yogurt Salt to taste Chopped coriander and mint. ￼
First boil mutton with whole Garam masala,sliced onion,ginger garlic,dhana powder,salt and haldi. Once mutton is complete done add boiled potatoes,chili powder,jeera powder ,Garam masala,yogurt,pinch of sugar and crushed brown onions. Mix all together. Now add chopped coriander and mint. Now u can give charcoal Dum. After this take a pot and first layer of half boiled rice then mutton mixture then again some chopped coriander and mint and crushed brown onion. Then layer again remaining rice. Sprinkle some orange food color,coriander,mint and brown onion. Melt 2 tablespoon ghee (Clarified butter) and pour over rice. Sprinkle some water.
